HANYEONGSEOK INSTITUTE

Nuruk Master Han Youngseok isn't one to follow fads – They ferment their clear yakju the way it’s been done for centuries. This revered beverage, believed to predate the Joseon Dynasty of 1392, was reserved for Korea’s scholars and elite. It was so well loved, Yi Ik, a famous scholar, even expressed his affinity for this brew in his books.

His signature makkoli, Cheongmyeongju, was named after the auspicious day of clear skies in early April when pear trees blossom, the ferment was traditionally kicked off on this date to capture the perfect fermentation temperature in the year. The result is a crystal clear yakju with sweet, fruity, and floral notes which Han has maintained with Yi Ik's core methodology - rice, water and a 100 day fermentation process; using a proprietary Nuruk blend he created himself.
